After evaluating our options, we decided to isolate an organism from a food source, a fruit in particular. We were curious to see how long it would take for orange juice to spoil. As a result we chose to scan for Lactobacillus casei in our concentrated orange juice samples. After researching effective ways to isolate L. casei we decided to use Lactobacillus Selection Oxgall Agar for the enrichment of our organism of choice. Using previous microbilogy techniques, we preformed a variety of tests to both isolate, and confirm the presence of Lactobacillus casei. We also learned that L. casei is an effective probiotic, as well as a biopreservative. The organism is an effective probiotic because it binds well to the intestinal tract preventing the binding of harmful microorganisms. The biopreservative qualities come from the products produced by the organism that are inhibitory to other bacteria. After conducting our confirmation experiments, we were able to conclude that we had isolated our organism.
